Description

A moist and nutritious carrot, orange and oat cake naturally sweetened with honey and made with wholesome oat flour. Perfect for breakfast, snacks, or a light healthy dessert.


Ingredients

Scale

3 large eggs

150 g grated carrot

120 g oat flour or finely ground oats

80 g honey or maple syrup

60 ml fresh orange juice

Zest of 1 orange

50 ml coconut oil or light olive oil

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

Pinch of salt

40 g chopped walnuts or almonds optional

150 g cream cheese or Greek yogurt optional topping

2 tablespoons honey optional topping

1 teaspoon vanilla extract optional topping

80 g powdered sugar optional glaze

1–2 tablespoons orange juice optional glaze


Instructions

1. Preheat oven to 350°F (180°C) and line an 8 inch cake pan with parchment paper.

2. Whisk together eggs honey orange juice orange zest and oil until smooth.

3. Stir in the grated carrots.

4. In another bowl mix oat flour baking powder baking soda cinnamon and salt.

5. Fold the dry ingredients into the wet mixture gently until just combined.

6. Stir in chopped nuts if using.

7. Pour batter into the prepared cake pan.

8. Bake for 30 to 35 minutes until a toothpick inserted into the center comes out clean.

9. Allow the cake to cool completely before adding toppings.

10. For the cream layer mix cream cheese or Greek yogurt with honey and vanilla then spread over the cooled cake.

11. For the glaze whisk powdered sugar with orange juice and drizzle lightly over the cake.

Notes

Use finely ground oats for the best cake texture.

Fresh orange juice gives the brightest flavor.

Do not overmix the batter to keep the cake light and fluffy.

Allow the cake to cool before adding glaze or cream topping.
