Description

These Healthy Blueberry Bagels are soft, fluffy, and yeast-free with about 10g of protein per bagel. Made with Greek yogurt and bursting with juicy blueberries, they’re an easy, high-protein breakfast.


Ingredients

Scale

1½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup plain Greek yogurt

1 tablespoon honey or maple syrup

¾ cup blueberries (fresh or frozen)

1 teaspoon lemon zest (optional)

1 egg, beaten (for topping)

1 tablespoon coarse sugar or oats (optional)


Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet.

2. Whisk flour, baking powder, and salt.

3. Stir in Greek yogurt and honey until dough forms.

4. Gently fold in blueberries and lemon zest.

5. Divide dough into 4 portions and shape into bagels.

6. Brush with egg wash and sprinkle with sugar or oats.

7. Bake 22–25 minutes until golden.

8. Cool slightly before serving.

Notes

Use thick Greek yogurt for best results.

Frozen blueberries should not be thawed.

Lightly flour hands if dough is sticky.

Delicious toasted with cream cheese.
