Description
Rich and fudgy chocolate cookies made with cottage cheese for a high-protein, healthier treat the whole family loves.
Ingredients
1 cup 4% cottage cheese
2 cups dark chocolate chips (divided)
2 large eggs
¼ cup maple syrup or honey
1 tsp vanilla extract
1 cup almond flour
¼ cup cocoa powder
½ tsp baking powder
¼ tsp salt
Instructions
1. Melt 1½ cups chocolate chips.
2. Blend cottage cheese until smooth.
3. Blend in eggs, sweetener, vanilla, and melted chocolate.
4. Mix dry ingredients separately.
5. Combine wet and dry mixtures.
6. Fold in remaining chocolate chips.
7. Bake at 350°F for 10–12 minutes.
8. Cool before serving.
Notes
Blend cottage cheese completely smooth.
Do not overbake.
Cookies firm up as they cool.
