Description

This Hawaiian Poke Cake is a tropical dessert packed with pineapple, creamy coconut milk, and sweet condensed milk. Soft vanilla cake is poked and soaked with a rich pineapple mixture, then topped with fluffy whipped cream and toasted coconut for the ultimate refreshing island-style dessert.


Ingredients

1 box yellow cake mix

Ingredients required for cake mix (eggs, oil, water)

1 (20 oz) can crushed pineapple with juice

1 (14 oz) can sweetened condensed milk

1/2 cup coconut milk (optional but recommended)

1 (8 oz) container whipped topping (Cool Whip), thawed

1/2 cup shredded coconut, toasted

1/2 cup chopped macadamia nuts (optional)

Maraschino cherries for garnish (optional)


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.

2. Prepare the yellow cake mix according to package instructions and pour the batter into the baking dish.

3. Bake for about 28–32 minutes or until a toothpick inserted in the center comes out clean.

4. Remove the cake from the oven and allow it to cool for about 10 minutes.

5. Using the handle of a wooden spoon, poke holes all over the cake.

6. In a bowl mix crushed pineapple with juice, sweetened condensed milk, and coconut milk.

7. Slowly pour the pineapple mixture over the cake making sure it fills the holes.

8. Let the cake cool completely so the mixture soaks into the cake.

9. Spread whipped topping evenly over the cake.

10. Sprinkle toasted coconut and chopped macadamia nuts on top.

11. Garnish with maraschino cherries if desired.

12. Refrigerate for at least 2 hours before serving for the best flavor.

Notes

Refrigerating the cake allows the pineapple mixture to fully soak into the cake.

For extra tropical flavor, add diced mango or pineapple chunks on top.

Store covered in the refrigerator for up to 4 days.

You can toast the coconut in a skillet for 2–3 minutes until golden.
