Description

Soft, fudgy, and topped with beautiful crackles, these Healthy Greek Yogurt Peanut Butter Dark Chocolate Chip Cookie Bars are made with wholesome ingredients for a protein-packed treat.


Ingredients

1/2 cup peanut butter

1/3 cup Greek yogurt

1/4 cup honey or maple syrup

1 egg

1 teaspoon vanilla extract

1 cup oat flour

1/2 teaspoon baking powder

1/4 cup dark chocolate chips


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

2. In a mixing bowl, stir together peanut butter, Greek yogurt, honey or maple syrup, egg, and vanilla extract until smooth.

3. Add oat flour and baking powder. Mix until just combined.

4. Fold in chocolate chips and spread the batter into the prepared pan.

5. Bake for 18–22 minutes, until tops are golden and crackled.

6. Cool completely before slicing into bars.

Notes

For extra crunch, add chopped nuts or seeds.

Sprinkle flaky sea salt on top before baking for a sweet-salty twist.

Store in an airtight container for 2–3 days or refrigerate up to a week.
