Ingredients
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 apple (peeled & diced)
1 teaspoon cinnamon
1 cup oat flour
1/2 teaspoon baking powder
Instructions
1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
2. Whisk together peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
3. Add oat flour, baking powder, and cinnamon. Mix until just combined.
4. Fold in diced apple pieces.
5. Spread batter in pan and bake for 22–25 minutes until golden.
6. Cool before slicing into blondies.
