These Healthy Peanut Butter Greek Yogurt Cinnamon Roll Blondie Muffins have gooey centers, warm cinnamon spice, and a wholesome base of peanut butter, Greek yogurt, and oat flour. Perfect for breakfast, brunch, or a healthy snack.
Ingredients
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon cinnamon
1 cup oat flour
1/2 teaspoon baking powder
Instructions
1. Whisk together peanut butter, Greek yogurt, honey, and egg until smooth.
2. Stir in oat flour, cinnamon, and baking powder until combined.
3. Fill muffin liners halfway, add a spoonful of peanut butter or cinnamon mixture in the center, then top with more batter.
4. Bake at 350ยฐF (175ยฐC) for 15โ18 minutes until golden but still soft inside.
