Description

These Healthy Greek Yogurt Chocolate Banana Bread Bars are fudgy, gooey, naturally sweetened, and packed with protein thanks to Greek yogurt. A wholesome snack or healthy dessert made with simple kitchen staples.

Ingredients

Scale

2 ripe bananas (mashed)

1/2 cup Greek yogurt

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1 egg

1 teaspoon vanilla extract

1 cup oat flour

1/2 teaspoon baking powder

Pinch of salt

1/4 cup chocolate chips

Instructions

1. Line an 8×8 pan with parchment paper and lightly spray it.

2. Mash bananas in a bowl until mostly smooth.

3. Whisk in Greek yogurt, honey or maple syrup, egg, and vanilla.

4. Add cocoa powder, oat flour, baking powder, and salt. Mix to combine.

5. Fold in chocolate chips, saving some for the top.

6. Spread batter into the pan and top with more chips.

7. Bake at 350°F (175°C) for 18–22 minutes until edges are set and center is slightly soft.

8. Cool 20 minutes before slicing.

Notes

Do not overbake — the gooey center makes these bars amazing.

Use very ripe bananas for natural sweetness.

Bars get fudgier after chilling in the refrigerator overnight.
