Description

Tender, flaky crescent cookies made from a butter and sour cream dough, rolled around a sweet ground walnut filling, baked until golden, and dusted with powdered sugar.

Ingredients

Scale

For the dough: 4 cups (500 g) all-purpose flour, plus extra for rolling

1 teaspoon salt

1 1/2 cups (340 g) cold unsalted butter, cut into small pieces

1 packet (2 1/4 teaspoons) active dry yeast

1/4 cup (60 ml) warm milk

1 cup (230 g) sour cream

3 large egg yolks

1/4 cup (50 g) granulated sugar

For the filling: 3 cups (300 g) finely ground walnuts

1 cup (200 g) granulated sugar

3 large egg whites

1 teaspoon vanilla extract

For finishing: 1/2 cup (60 g) powdered sugar

Instructions

1. In a small bowl, stir the yeast into the warm milk and let it sit for 5 minutes until foamy.

2. In a large bowl, whisk the flour and salt. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

3. Whisk the sour cream, egg yolks, 1/4 cup sugar, and the yeast mixture together. Stir into the flour mixture until a soft dough forms.

4. Divide the dough into 8 equal pieces, shape each into a disk, wrap, and refrigerate overnight.

5. For the filling, stir the ground walnuts, 1 cup sugar, egg whites, and vanilla together until it forms a thick, spreadable paste.

6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

7. On a floured surface, roll one disk into a thin 9-inch circle. Spread with a thin layer of filling and cut into 8 wedges.

8. Starting at the wide end, roll each wedge up toward the point. Place on the baking sheet with the point tucked underneath and curve slightly into a crescent.

9. Bake for 15 to 20 minutes, until lightly golden on the bottom. Cool on a wire rack and dust with powdered sugar.

Notes

Original Poulef recipe adapted from published grandma-style nut horns (Christmas-Cookies.com, Zest Kitchen, Smith Dairy, and Meatloaf and Melodrama) that use a butter and sour cream dough, a ground walnut filling, a 350°F oven, and powdered sugar. The sources list 4 cups flour, 1 1/2 cups butter, and 1 cup sour cream for about 64 cookies. The amounts of yeast, milk, egg yolks, sugar, and salt, the filling quantities, and the bake time were not fully readable, so they are estimates, and the recipe has not been tested.

Roll the dough thin for the flakiest horns.

The dough keeps in the refrigerator for up to 2 days.
