Ingredients
2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 cup milk
2 eggs
1 tbsp vanilla
Instructions
1. Preheat oven to 200°C and prepare muffin tin.
2. Mix dry ingredients.
3. Mix wet ingredients.
4. Combine gently without overmixing.
5. Fill muffin cups.
6. Bake 5 minutes at high temp then reduce heat and continue baking.
7. Cool before serving.
Notes
Do not overmix.
Use buttermilk for extra softness.
Start with high heat for bakery tops.
Cool before removing.
