Description
Soft and buttery almond ricotta tea cake that melts in your mouth.
Ingredients
1 cup ricotta cheese
1/2 cup butter
3/4 cup sugar
3 eggs
1 tsp almond extract
1 tsp vanilla extract
1 1/2 cups flour
1/2 cup almond flour
2 tsp baking powder
pinch salt
Topping:
powdered sugar
sliced almonds
Instructions
1. Preheat oven and prepare cake pan.
2. Cream butter, sugar, and ricotta.
3. Add eggs and flavorings.
4. Mix dry ingredients.
5. Bake for 35–40 minutes.
6. Cool and dust with powdered sugar.
7. Top with almonds and serve.
Notes
Use room temperature ricotta. Do not overmix for a soft crumb.
