Description

These gluten-free iced ginger oatmeal cookies are soft, chewy, warmly spiced, and topped with a classic vanilla icing. A cozy bakery-style cookie made easy at home.


Ingredients

2 cups gluten-free rolled oats

1 cup gluten-free all-purpose flour

1 tsp ground ginger

1 tsp cinnamon

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup brown sugar

2 tbsp molasses

1 large egg

1 tsp vanilla extract

1 cup powdered sugar

2–3 tbsp milk


Instructions

1. Preheat oven to 350°F and line baking sheets.

2. Cream butter and brown sugar until fluffy.

3. Mix in molasses, egg, and vanilla.

4. Whisk dry ingredients and fold into wet mixture.

5. Scoop dough, flatten slightly, and bake 10–12 minutes.

6. Cool completely.

7. Mix icing and drizzle over cookies.

Notes

Use certified gluten-free oats.

Let cookies cool before icing.
