Description

A moist Gluten-Free Date & Walnut Loaf Cake naturally sweetened with dates and filled with crunchy walnuts and warm spices. Perfect for holiday baking and cozy afternoons.


Ingredients

2 cups gluten-free all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ground ginger

1 cup chopped dates

3/4 cup boiling water

1 teaspoon baking soda

2 large eggs

1/3 cup melted coconut oil

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

3/4 cup chopped walnuts


Instructions

1. Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.

2. Soak the chopped dates in boiling water with baking soda for 10 minutes.

3. Whisk together the dry ingredients.

4. Mix the eggs, coconut oil, honey, vanilla, and softened dates.

5. Fold the dry ingredients into the wet ingredients and stir in the walnuts.

6. Bake for 50 to 60 minutes until a toothpick comes out clean.

7. Cool before slicing and serve.

Notes

Use Medjool dates for extra moisture.

Allow the loaf to cool completely before slicing.

Freeze individual slices for easy breakfasts or snacks.
