Description

A moist, tender one-bowl loaf cake made with pure maple syrup, brown sugar, and buttermilk, baked until golden and finished with a sweet maple glaze.

Ingredients

Scale

1/2 cup (113 g) butter, melted and cooled

1/2 cup (120 ml) vegetable oil or olive oil

1/2 cup (120 ml) pure maple syrup

1/2 cup (100 g) packed brown sugar

3 large eggs, at room temperature

1 teaspoon vanilla extract

1/2 teaspoon maple extract

1/2 cup (120 ml) buttermilk or Greek yogurt

2 cups (250 g) all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

For the glaze: 2/3 cup (80 g) powdered sugar

For the glaze: 2 teaspoons pure maple syrup

For the glaze: 1 to 2 teaspoons milk

For the glaze: Pinch of flaky sea salt, optional

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9 x 5-inch loaf pan, or line it with parchment paper.

2. In a large bowl, whisk the melted butter, oil, maple syrup, and brown sugar until smooth. Whisk in the eggs one at a time, then the vanilla, maple extract, and buttermilk.

3. Add the flour, baking powder, and salt and stir until just combined, with no dry streaks.

4. Pour the batter into the prepared pan and smooth the top.

5. Bake for 55 to 60 minutes, until a toothpick inserted into the center comes out clean.

6. Cool in the pan for 10 minutes, then lift out onto a wire rack and cool completely.

7. For the glaze, whisk the powdered sugar, maple syrup, and 1 teaspoon of milk until smooth, adding more milk to thin it or more powdered sugar to thicken it.

8. Pour the glaze over the completely cooled cake, sprinkle with flaky salt if using, and let it set before slicing.

Notes

Based on the Maple Loaf Cake published by Sara’s Baking Blog (the butter, oil, maple syrup, brown sugar, eggs, vanilla, maple extract, buttermilk, flour, baking powder, and salt quantities, the 350°F oven, the 9 x 5-inch pan, the 55 to 60 minute bake, and the glaze are from the source). The yield of 10 slices and the cooling details are estimates, and the recipe has not been tested.

Use pure maple syrup, not pancake syrup, for the best flavor.

Let the cake cool completely before glazing so the glaze sets instead of sliding off.

Nutrition is an approximate estimate per slice (10 slices), including the glaze.
