Description

Buttery slice-and-bake shortbread cookies studded with colorful glazed fruit and cherries, baked until just set and brushed with a sweet glaze.

Ingredients

Scale

1 cup (226 g) unsalted butter, softened

1/2 cup (60 g) powdered sugar

1 teaspoon vanilla extract

2 cups (250 g) all-purpose flour

1/4 teaspoon salt

1 cup (about 150 g) mixed glazed fruit and glazed cherries, chopped

For the glaze: 1 cup (120 g) powdered sugar

For the glaze: 2 to 3 tablespoons milk or rum, as needed

Instructions

1. In a large bowl, beat the softened butter, powdered sugar, and vanilla until smooth and creamy.

2. Add the flour and salt and mix just until the dough comes together. Do not overmix.

3. Fold in the chopped glazed fruit and cherries.

4. Divide the dough in half, shape each half into a log, wrap tightly, and chill for at least 2 hours, until firm.

5. Preheat the oven to 325°F (165°C). Line baking sheets with parchment paper.

6. Slice the logs into rounds about 1/2 inch (1.25 cm) thick and place them on the sheets about 1 inch apart.

7. Bake for 15 to 18 minutes, until set and just barely golden at the edges.

8. Cool completely on a wire rack.

9. Whisk the powdered sugar with enough milk or rum to make a thick glaze that can be brushed on. Brush over the cooled cookies and let the glaze set.

Notes

Based on the Glazed Fruitcake Shortbread Cookies recipe published by Shesnotcookin (butter, powdered sugar, vanilla, and flour shortbread dough with about 1 cup of mixed glazed fruit and glazed cherries, shaped, chilled, sliced, baked, and brushed with a glaze thinned with milk or rum), with a yield of 24 cookies from another version of the recipe and chilling and 325°F oven guidance from other published shortbread cookie recipes. The amounts of butter, powdered sugar, flour, and salt, the bake time, and the glaze quantities are estimates based on a standard shortbread ratio, because the full quantities were not available to us. The recipe has not been tested.

Do not overmix the dough, or the cookies will be tough instead of tender.

Chill the dough until firm so the slices stay neat and the cookies do not spread.
