Description
A soft and rich gingerbread pound cake topped with a creamy vanilla icing. Perfectly spiced and incredibly cozy for the holidays.
Ingredients
1 cup butter
1 cup brown sugar
3 eggs
1/2 cup molasses
1 cup yogurt
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tbsp ginger
1 tsp cinnamon
1/2 tsp nutmeg
pinch salt
1 tsp vanilla
1 cup powdered sugar
2โ3 tbsp milk
1/2 tsp vanilla extract
Instructions
1. Preheat oven and prepare loaf pan.
2. Cream butter and sugar until fluffy.
3. Add eggs one at a time.
4. Mix in molasses, yogurt, and vanilla.
5. Combine dry ingredients and mix into batter.
6. Pour into pan and bake for 50โ60 minutes.
7. Cool completely.
8. Whisk icing ingredients and drizzle over cake.
Notes
Let cake cool fully before icing. Adjust icing thickness as desired. Flavor improves overnight.
