Ingredients
2 cups almond flour
2 tsp ground ginger
1 tsp ground cinnamon
½ tsp ground cloves
½ tsp ground nutmeg
1 tsp baking powder
½ tsp baking soda
3 large eggs
½ cup molasses
¼ cup maple syrup
⅓ cup melted coconut oil
1 tsp vanilla extract
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line a 9-inch cake pan.
2. Whisk together almond flour, spices, baking powder, baking soda, and salt.
3. In another bowl, whisk eggs, molasses, syrup, oil, and vanilla.
4. Combine wet and dry ingredients and mix until smooth.
5. Pour into pan and bake 30–35 minutes or until set.
6. Cool, dust with sugar, and serve.
