This Gingerbread Cheesecake is rich, creamy, and perfectly spiced with molasses and warm gingerbread flavors. A holiday dessert everyone loves.
Ingredients
Crust:
1½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
Filling:
24 oz cream cheese, softened
1 cup brown sugar
3 large eggs
½ cup molasses
1 tsp vanilla extract
1½ tsp ground ginger
1 tsp cinnamon
¼ tsp cloves
¼ tsp nutmeg
Pinch of salt
Instructions
1. Preheat oven to 325°F.
2. Mix and bake crust.
3. Beat cream cheese and sugar.
4. Add eggs, molasses, vanilla, and spices.
5. Pour over crust.
6. Bake until set and chill overnight.
Notes
Cool slowly to avoid cracks.
Chill overnight for best flavor.
Serve with whipped cream or gingersnap crumbs.
