Moist Ginger Apple Cake filled with fresh apples, cinnamon, and ginger, served with a silky homemade warm lemon sauce.
Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup unsalted butter
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
2 cups diced apples
1/4 cup crystallized ginger (optional)
Warm Lemon Sauce:
1/2 cup sugar
1/4 cup lemon juice
1/4 cup water
1 tablespoon cornstarch
1 tablespoon butter
Zest of 1 lemon
Instructions
1. Preheat oven to 350°F (175°C).
2. Whisk together the dry ingredients.
3. Cream the butter and sugar until fluffy.
4. Beat in the eggs and vanilla.
5. Alternate adding the dry ingredients and buttermilk.
6. Fold in the apples and crystallized ginger.
7. Bake for 40–50 minutes.
8. Prepare the lemon sauce by cooking the sugar, lemon juice, water, and cornstarch until thickened, then stir in the butter and zest. Serve warm over the cake.
Notes
Use tart apples for the best flavor.
Do not overmix the batter.
Serve the lemon sauce warm for the best texture.
