Description
Healthy peanut butter banana Greek yogurt brownie bites with oat flour, cocoa powder, melty chocolate chips, and crackled tops.
Ingredients
2 ripe bananas, mashed
1/3 cup peanut butter
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
3/4 cup oat flour
2 tablespoons cocoa powder
1/4 cup chocolate chips
1/2 teaspoon baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and prepare a mini muffin pan.
2. Mash bananas and whisk in peanut butter, Greek yogurt, honey, egg, and vanilla.
3. Mix in oat flour, cocoa powder, baking powder, and salt.
4. Fold in the chocolate chips.
5. Fill muffin cups three-quarters full.
6. Bake for 14–17 minutes until crackled and fudgy.
7. Cool for 10 minutes before serving.
Notes
Use very ripe bananas for natural sweetness.
Do not overbake to keep the centers fudgy.
Store refrigerated for up to 5 days or freeze for up to 3 months.
