Description

A rich and moist fruit and nut cake filled with dried fruits and crunchy nuts. Perfect for holidays, tea time, or classic homemade dessert.


Ingredients

Scale

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon or mixed spice

1/2 cup butter softened

3/4 cup brown sugar

2 eggs

1 teaspoon vanilla extract

1/2 cup milk or orange juice

1 cup mixed dried fruits

1/2 cup candied cherries or peel

1/2 cup chopped nuts


Instructions

1. Preheat oven to 350°F and line a cake pan with parchment paper

2. Whisk flour baking powder baking soda salt and cinnamon

3. Beat butter and brown sugar until fluffy

4. Add eggs one at a time and mix in vanilla

5. Alternate adding dry ingredients and milk

6. Fold in dried fruits and nuts

7. Pour batter into pan and bake 40–50 minutes until done

Notes

Toss dried fruits with flour before adding to prevent sinking

Use fresh nuts for best flavor

Allow cake to cool completely before slicing
