Ingredients
2¼ cups all-purpose flour
3 tbsp corn flour (cornstarch)
1 tsp baking powder
½ tsp baking soda
½ tsp salt
6 tbsp unsalted butter
¾ cup vegetable oil (canola)
1⅔ cups sugar
2 lemons, zested
2 large eggs
2 tbsp milk
¾ cup yogurt (not Greek)
Instructions
1. Preheat oven to 350°F (175°C). Grease and line a baking pan.
2. Whisk flour, corn flour, baking powder, baking soda, and salt.
3. Cream butter, oil, and sugar until fluffy.
4. Beat in eggs one at a time, then add lemon zest.
5. Mix in milk and yogurt until smooth.
6. Gradually fold in dry mixture until just combined.
7. Bake 35–40 minutes until golden and cooked through.
