Description
These moist and fluffy cottage cheese muffins are secretly healthy and high in protein — a perfect breakfast or snack.
Ingredients
¾ cup whipped cottage cheese
¼ cup olive oil
2 large eggs
¼ cup milk
1 teaspoon vanilla extract
1½ cups all-purpose flour
⅓ cup sugar
2 teaspoons baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line muffin tin.
2. Whisk together cottage cheese, oil, eggs, milk, and vanilla.
3. Mix flour, sugar, baking powder, and salt in another bowl.
4. Combine wet and dry ingredients.
5. Scoop into muffin cups and bake 18–20 minutes.
6. Cool before serving.

Store muffins in an airtight container for up to 2 days at room temperature or 5 days in the fridge.
