Description
Soft flourless Greek yogurt protein scones that taste like dessert but are high in protein and healthy.
Ingredients
1 cup Greek yogurt
2 eggs
1/2 cup vanilla protein powder
1/2 cup almond flour
1 tsp baking powder
2 tbsp honey
1 tsp vanilla extract
Pinch of salt
Optional blueberries or chocolate chips
Instructions
1. Preheat oven to 180°C and prepare tray.
2. Whisk yogurt, eggs, honey, and vanilla.
3. Add dry ingredients and mix into thick dough.
4. Fold in add-ins.
5. Shape into scones.
6. Bake 15–18 minutes.
7. Cool and serve.
Notes
Do not overmix the batter.
Use thick Greek yogurt for best texture.
Store in fridge for up to 5 days.
