Description

Creamy, festive, and totally guilt-free — this Flourless Eggnog Greek Yogurt Cake is a velvety, spiced holiday dessert made with Greek yogurt, almond flour, and real eggnog. It’s naturally gluten-free, lightly sweetened, and irresistibly creamy with warm notes of cinnamon and nutmeg!


Ingredients

1 cup plain Greek yogurt (whole milk or 2%)

½ cup eggnog

3 large eggs

1 cup almond flour

¼ cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon ground nutmeg

½ teaspoon ground cinnamon

Pinch of salt

¼ teaspoon rum extract (optional, for classic eggnog flavor)

Topping (optional but highly recommended):

¼ cup whipped Greek yogurt or coconut cream

Sprinkle of nutmeg or cinnamon

Light drizzle of maple syrup


Instructions

1. Preheat oven to 325°F (160°C) and line an 8-inch round cake pan or springform pan with parchment paper. Lightly grease the sides.

2. In a large bowl, whisk together Greek yogurt, eggnog, eggs, maple syrup, vanilla extract, and rum extract (if using) until smooth and creamy.

3. Add almond flour, nutmeg, cinnamon, and salt. Whisk until no lumps remain and the batter is thick but pourable.

4. Pour the batter into the prepared pan, smoothing the top with a spatula.

5. Bake for 40–45 minutes, or until the edges are set and the center has a gentle jiggle (like a cheesecake).

6. Remove from oven and let cool at room temperature for 30 minutes.

7. Transfer to the refrigerator and chill for at least 3 hours, or overnight, for the creamiest texture.

8. Once chilled, spread or pipe whipped Greek yogurt or coconut cream on top.

9. Sprinkle with nutmeg or cinnamon and finish with a light drizzle of maple syrup before serving.

Notes

⭐ For best results, use full-fat Greek yogurt — it gives the cake its creamy, velvety texture.

⭐ Do not overbake! The center should still jiggle slightly when removed from the oven for that custardy consistency.

⭐ Want a deeper flavor? Add a pinch of cloves or allspice to the batter.

⭐ Serve chilled or slightly cool — it tastes even better the next day!
