Description
A rich, fudgy, flourless chocolate banana breakfast cake made with cottage cheese and naturally sweet bananas for a protein-packed treat that tastes like dessert.
Ingredients
1 cup (225 g) cottage cheese
2 ripe bananas, mashed
2 large eggs
1/4 cup (25 g) unsweetened cocoa powder
1/4 cup (60 ml) maple syrup or honey (optional)
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt
1/3 cup (55 g) dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. Blend cottage cheese, bananas, eggs, vanilla extract, and maple syrup or honey until smooth.
3. Blend in cocoa powder, baking powder, and salt until fully combined.
4. Fold in the dark chocolate chips.
5. Pour batter into the prepared pan and spread evenly.
6. Bake for 25-30 minutes, or until the center is just set.
7. Allow cake to cool completely in the pan.
8. Slice into 9 squares and serve.
Notes
Use very ripe bananas with brown spots for the sweetest flavor.
Do not overbake to maintain a rich, fudgy texture.
Store refrigerated in an airtight container for up to 5 days.
These bars are excellent for meal prep and can be frozen for up to 2 months.
