Soft and chewy Flourless Cookie Butter Cookies made with creamy cookie butter, brown sugar, and simple pantry ingredients. Perfect for quick homemade treats.
Ingredients
1 cup creamy cookie butter
1 large egg
1/2 cup brown sugar
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
Pinch of salt
Instructions
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix the cookie butter, brown sugar, egg, and vanilla until smooth.
3. Stir in the baking soda and salt.
4. Fold in any optional add-ins if desired.
5. Scoop the dough onto the prepared baking sheet and flatten slightly.
6. Bake for 9–11 minutes, cool for 5 minutes, then transfer to a wire rack.
Notes
Do not overbake for the softest cookies.
Chill the dough for thicker cookies.
Freeze baked cookies for up to 3 months.
