Soft, gooey, and packed with warm cinnamon flavor, these Flourless Cinnamon Roll Bars are a gluten-free twist on a classic cinnamon roll. Perfect for breakfast or dessert!
Ingredients
1 cup almond butter
1/3 cup honey or maple syrup
2 large eggs
2 tsp ground cinnamon
1 tsp vanilla extract
Pinch of salt
1/2 tsp baking powder
Optional: 2 tbsp coconut sugar
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment.
2. Whisk together almond butter, honey, eggs, and vanilla.
3. Stir in cinnamon, salt, baking powder, and coconut sugar.
4. Spread into pan and bake 18–20 minutes until golden but soft.
5. Cool, slice, and enjoy.
Notes
Don’t overbake—these bars should stay gooey inside.
Swap almond butter for cashew or peanut butter.
Add a drizzle of cream cheese glaze for extra indulgence.
