Description

A soft, wholesome Flaxseed Oatmeal Cake made with oat flour, ground flaxseeds, maple syrup, and coconut oil. Naturally sweetened, rich in fiber, and perfect for breakfast or snacks.


Ingredients

1 1/2 cups (150g) oat flour

1/4 cup (30g) ground flaxseeds

1/4 cup (60ml) maple syrup or honey

2 large eggs (or flax eggs)

1/2 cup (120ml) milk or almond milk

1/4 cup (60ml) melted coconut oil or butter

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.

2. Whisk together eggs, milk, melted coconut oil, maple syrup, and vanilla.

3. Add oat flour, ground flaxseed, cinnamon, baking powder, baking soda, and salt.

4. Stir until a thick batter forms.

5. Pour into the pan and smooth the top.

6. Bake 18–25 minutes, until a toothpick comes out clean.

7. Cool for 10 minutes before slicing.

Notes

Use dairy-free milk and flax eggs for a vegan version.

Add raisins, nuts, or chocolate chips for extra flavor.

Store at room temperature for 2–3 days or refrigerate for up to 6 days.

Freeze slices for up to 3 months.
