Ingredients
1 cup ricotta cheese
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sliced almonds (optional)
Powdered sugar for dusting (optional)
Instructions
1. Cream together butter and sugar until light and fluffy.
2. Add ricotta, egg, vanilla, and almond extract. Mix until smooth.
3. In a separate bowl, whisk flour, baking powder, and salt. Slowly combine with wet mixture.
4. Scoop dough onto a parchment-lined baking sheet, topping with sliced almonds if desired.
5. Bake at 350°F for 12–15 minutes until lightly golden.
6. Cool on a wire rack and dust with powdered sugar before serving.
