Description
Soft, cinnamon-spiced baked donuts made with pancake mix and finely diced fresh apple, topped with a buttery brown sugar crumb. No frying and ready in about 30 minutes.
Ingredients
For the donuts: 2 cups pancake and waffle mix
1/4 cup packed brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup milk
1 large egg
3 tablespoons butter, melted
1 cup finely diced apple (about 1 medium apple), peeled
For the crumb topping: 2 tablespoons butter, softened
1/4 cup packed brown sugar
1/4 cup pancake and waffle mix
1/2 teaspoon cinnamon
Instructions
1. Preheat the oven to 350°F. Grease a donut pan well with nonstick spray or butter.
2. Mix the crumb topping ingredients with a fork until coarse crumbs form. Set aside.
3. Whisk the pancake mix, 1/4 cup brown sugar, 1 teaspoon cinnamon, and the nutmeg together in a large bowl.
4. Whisk the milk, egg, and melted butter together in a small bowl, then pour into the dry ingredients and stir until just combined. Do not overmix.
5. Gently fold in the diced apple.
6. Spoon or pipe the batter into the donut pan, filling each cavity about three-quarters full.
7. Sprinkle a spoonful of crumb topping over each donut and press it in lightly.
8. Bake for 10 to 12 minutes, until the donuts spring back when lightly pressed.
9. Cool in the pan for 5 minutes, then move the donuts to a wire rack. Repeat with the remaining batter.
Notes
Based on the pancake mix method used in published baked apple crumb donut recipes. Brown sugar, milk, and butter amounts were developed for Poulef. Test the first batch.
Dice the apple very small so the donuts hold together and bake evenly.
