Description
This Easter Pineapple Heaven Cake is a moist and fluffy spring dessert bursting with tropical pineapple flavor. Made with crushed pineapple, creamy filling, and a sweet citrus glaze, it’s the perfect treat for Easter brunch, family gatherings, or a refreshing homemade dessert.
Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1/2 cup full-fat sour cream
1 teaspoon vanilla extract
1 cup crushed pineapple, well drained
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Pineapple Filling
1 cup crushed pineapple, drained
1/2 cup cream cheese, softened
1/3 cup powdered sugar
1 teaspoon vanilla extract
Sweet Pineapple Glaze
1 cup powdered sugar
2 tablespoons pineapple juice
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
2. In a large bowl, cream butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Mix in sour cream and vanilla extract until smooth.
5. Fold in the crushed pineapple gently.
6. In another bowl whisk together flour, baking powder, baking soda, and salt.
7. Gradually add the dry ingredients to the wet mixture and stir until just combined.
8. Pour batter into the prepared pan and smooth the top.
9. Bake for 30–35 minutes until a toothpick inserted in the center comes out clean.
10. Allow the cake to cool completely before slicing.
11. For the filling, beat cream cheese, powdered sugar, vanilla, and pineapple until smooth.
12. Slice cake horizontally and spread the filling between the layers.
13. Whisk powdered sugar, pineapple juice, lemon juice, and vanilla to make the glaze.
14. Pour glaze over the cake and allow it to set before serving.
Notes
Drain pineapple very well so the cake doesn’t become soggy.
You can add shredded coconut for a tropical twist.
Store the cake refrigerated for up to 3 days.
Decorate with pineapple slices or toasted coconut for Easter presentation.
