Ingredients
Protein fudge:
2 cups peanut butter
1/2 cup brown rice syrup
1 1/2 cups oat flour
1 cup vanilla protein powder
Chocolate topping:
1/3 cup chocolate chips
1 tsp coconut oil
Instructions
1. Line an 8×8 pan with parchment.
2. Mix peanut butter and brown rice syrup until smooth.
3. Stir in oat flour and protein powder.
4. Press mixture into pan evenly.
5. Melt chocolate chips with coconut oil.
6. Spread chocolate topping over fudge.
7. Chill until set, then slice.
Notes
Use natural peanut butter for best texture.
Chill fully before slicing.
