Ingredients
1 cup heavy whipping cream
1/2 cup sugar-free chocolate pudding mix
Instructions
Start by pouring the heavy whipping cream into a mixing bowl. Using an electric mixer on medium-high speed, whip the cream until it forms stiff peaks. Don’t rush this step! You want the cream to be fluffy, airy, and light. You’ll know it’s ready when it holds its shape and looks like a cloud of happiness.
Once the cream is whipped perfectly, sprinkle the sugar-free chocolate pudding mix over it. Gently fold the pudding mix into the whipped cream using a rubber spatula. Be careful not to deflate the whipped cream; you want to maintain that airy texture. As you fold, you’ll see the mousse transform into a rich and creamy mixture that’s just tempting to dive into!
Transfer the mousse into serving cups or a larger bowl for family-style sharing. Cover and refrigerate for at least 30 minutes. Chilling allows the flavors to meld together and results in a firmer, more decadent texture that is just delightful when you’re ready to serve it.
Notes
Make sure your whipping cream is very cold before you start whipping.
If you’ve accidentally over-whipped the cream, gently fold in a little extra heavy cream to bring it back to life.
This mousse stores beautifully in the fridge for a few days, so feel free to whip it up in advance for planned gatherings.
