This moist and gooey Dark Chocolate Peanut Butter Greek Yogurt Banana Loaf combines ripe bananas, rich cocoa, creamy peanut butter, and Greek yogurt for a decadent yet wholesome treat.
Ingredients
2 ripe bananas (mashed)
1/2 cup peanut butter
1/2 cup Greek yogurt
1/4 cup honey or maple syrup
2 eggs
1 teaspoon vanilla extract
1 cup oat flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/3 cup dark chocolate chunks
Instructions
1. Preheat oven to 350°F (175°C) and line a loaf pan.
2. Mash bananas until smooth.
3. Whisk in peanut butter, Greek yogurt, honey/maple syrup, eggs, and vanilla.
4. In another bowl, mix oat flour, cocoa powder, baking soda, and cinnamon.
5. Fold dry ingredients into wet mixture.
6. Stir in dark chocolate chunks.
7. Pour batter into loaf pan and smooth top.
8. Bake for 40–45 minutes until a toothpick comes out clean.
9. Cool before slicing.
Notes
Use super ripe bananas for natural sweetness.
Don’t overmix the batter.
Cool completely before slicing for gooey layers.
