Thin, crispy keto pecan lace cookies made with butter, chopped pecans, and sugar-free sweetener. Naturally gluten-free and perfect with coffee or dessert.
Ingredients
1 cup finely chopped pecans
¼ cup unsalted butter, melted
⅓ cup powdered erythritol or monk fruit sweetener
1 large egg white
½ teaspoon vanilla extract
Pinch of salt
¼ cup sugar-free dark chocolate chips (optional)
1 teaspoon coconut oil (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet.
2. Whisk butter, sweetener, egg white, vanilla, and salt.
3. Stir in chopped pecans.
4. Scoop small mounds onto baking sheet, spacing well.
5. Bake 7–9 minutes until golden and lacy.
6. Cool completely to crisp.
7. Dip in melted sugar-free chocolate if desired.
Notes
Cookies spread thin—space them well.
Watch closely to prevent burning.
Cool fully before removing.
