Description
A creamy coconut frozen pie made with condensed milk, coconut milk, and coconut flakes on a buttery cookie crust.
Ingredients
200 g crushed maize cookies
80 g melted butter
1 can condensed milk
1 can cream
200 ml coconut milk
150 g coconut flakes unsweetened
100 g toasted coconut flakes for decoration
Instructions
1. Crush cookies and mix with melted butter
2. Press mixture into pie pan to form crust
3. Chill crust for 15 minutes
4. Mix condensed milk cream and coconut milk until smooth
5. Fold in coconut flakes
6. Pour filling over crust
7. Freeze for 4 to 6 hours until firm
8. Decorate with toasted coconut before serving
Notes
Chill crust before adding filling
Use unsweetened coconut flakes
Let pie sit 10 minutes before slicing
