Description
Soft, fluffy little yeast rolls stuffed with a sweet orange cream cheese filling, baked together in one pan and finished with a simple orange glaze.
Ingredients
For the dough: 3 1/2 cups (440 g) all-purpose flour, plus extra for dusting
1/4 cup (50 g) granulated sugar
2 1/4 teaspoons (1 packet) instant yeast
1 teaspoon salt
1 cup (240 ml) warm milk
1/4 cup (57 g) unsalted butter, melted
1 large egg
1 tablespoon orange zest
For the filling: 8 ounces (227 g) cream cheese, softened
1/3 cup (67 g) granulated sugar
1 tablespoon orange zest
1 teaspoon vanilla extract
For the glaze: 1 cup (120 g) powdered sugar
2 tablespoons fresh orange juice
1 teaspoon orange zest
Instructions
1. In a large bowl, whisk the flour, 1/4 cup sugar, yeast, and salt. Add the warm milk, melted butter, egg, and 1 tablespoon orange zest and stir until a shaggy dough forms.
2. Knead on a lightly floured surface for 6 to 8 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, until doubled.
3. Beat the cream cheese, 1/3 cup sugar, 1 tablespoon orange zest, and vanilla until smooth. Refrigerate while the dough rises.
4. Grease a 9×13-inch baking pan. Punch down the dough and divide it into 12 equal pieces.
5. Flatten each piece into a 3-inch circle, place a heaping tablespoon of filling in the center, and pinch the edges to seal. Roll gently into a ball, seam side down.
6. Arrange the rolls in the pan, cover, and let rise for 30 minutes until puffy. Preheat the oven to 350°F (175°C).
7. Bake for 25 to 30 minutes, until golden brown.
8. Whisk the glaze ingredients until smooth. Drizzle over the warm rolls and serve.
Notes
Original Poulef recipe adapted from published orange cream cheese pull-apart rolls (Barbara Bakes, The Stay at Home Chef, and Plain Chicken) that use a soft yeast dough, an orange cream cheese filling, a 350°F oven, and an orange glaze. No published recipe titled panecitos was found, so the formula follows standard soft dinner roll proportions, and the amounts, rising times, bake time, and yield are estimates. The recipe has not been tested.
Panecitos are small, soft sweet rolls. Seal the filling well so it does not leak.
The rolls are best the day they are baked.
