Creamy cottage cheese pumpkin protein bake that tastes like pumpkin cheesecake. High protein, low sugar, and perfect for a healthy dessert.
Ingredients
1 cup cottage cheese
1 cup pumpkin puree
2 eggs
1/2 cup vanilla protein powder
1/4 cup maple syrup
1 tsp vanilla extract
1 tsp pumpkin spice
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 180°C and grease dish.
2. Blend cottage cheese, pumpkin, eggs, maple syrup, and vanilla.
3. Add protein powder, spices, baking powder, and salt.
4. Blend until smooth.
5. Pour into baking dish.
6. Bake 30–35 minutes.
7. Cool completely before slicing.
Notes
Blend well for smooth texture.
Do not overbake.
Chill for best texture.
Store in fridge up to 5 days.
