Ingredients

1 large egg
1 tbsp maple syrup or honey
½ tsp vanilla extract
2 tbsp almond flour
¼ tsp cinnamon
Pinch of salt
1–2 tbsp chopped pecans (optional)
Instructions
1. Blend cottage cheese until smooth if desired.
2. Whisk cottage cheese, egg, maple syrup, and vanilla in a mug.
3. Stir in almond flour, cinnamon, salt, and pecans.
4. Microwave 90–120 seconds until just set.
5. Rest 1 minute before serving.
Notes
Blend cottage cheese for best texture.
