Soft and chewy chocolate chip cookie bars made with blended cottage cheese for extra protein, moisture, and a delicious bakery-style texture.
Ingredients
1 cup (225 g) cottage cheese
1/2 cup (113 g) unsalted butter, softened
1 cup (220 g) packed brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups (250 g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1½ cups (255 g) semi-sweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. Blend cottage cheese until completely smooth.
3. In a large bowl, cream together butter and brown sugar until light and fluffy.
4. Beat in the egg and vanilla extract.
5. Mix in the blended cottage cheese until fully incorporated.
6. Add flour, baking soda, and salt. Mix just until combined.
7. Fold in the chocolate chips evenly throughout the dough.
8. Spread the dough into the prepared pan and smooth the top.
9. Bake for 25-30 minutes or until the edges are golden and the center is set.
10. Allow bars to cool completely before slicing into 16 squares.
Notes
Blend the cottage cheese completely smooth for the best texture.
Slightly underbake for extra chewy bars.
Sprinkle with flaky sea salt before serving if desired.
Store in an airtight container for up to 5 days or freeze for up to 2 months.
