Description
A moist carrot cake made with blended cottage cheese and a creamy cream cheese swirl. Soft, rich, and healthier than traditional versions.
Ingredients
1 cup cottage cheese
1 cup grated carrots
2 eggs
1/2 cup maple syrup
1/3 cup coconut oil
1 tsp vanilla
1 1/2 cups oat flour
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp nutmeg
pinch salt
cream cheese
honey
Instructions
1. Blend cottage cheese until smooth.
2. Mix wet ingredients.
3. Add grated carrots.
4. Combine dry ingredients.
5. Mix into batter.
6. Layer batter and cream cheese swirl.
7. Bake 30โ35 minutes.
Notes
Blend cottage cheese well.
Do not overmix batter.
