Description
Soft and naturally sweet cottage cheese banana chocolate chip breakfast cookies made with oats. A healthy protein-packed snack perfect for breakfast or on-the-go.
Ingredients
1 cup cottage cheese
1 ripe banana, mashed
1 1/4 cups rolled oats (or quick oats)
1/4 cup chocolate chips
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp baking powder
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper
2. Mash the ripe banana in a mixing bowl until smooth
3. Stir in cottage cheese and vanilla extract until combined
4. Add oats, cinnamon, baking powder and salt and mix to form a thick dough
5. Fold in chocolate chips
6. Scoop dough onto baking sheet, flatten slightly and bake 12–15 minutes until lightly golden
Notes
Use very ripe bananas for natural sweetness
Blend cottage cheese for smoother cookie texture if desired
Cookies stay soft and can be stored in the fridge for up to 5 days
