Description
This Coconut & Cornflake Slice is a retro-style chewy, crunchy, buttery treat made with golden syrup, coconut, and crispy cornflakes. Perfect for afternoon tea, bake sales, or lunchboxes!
Ingredients
125 g unsalted butter
1/2 cup brown sugar
1 tbsp golden syrup
1 cup self-raising flour
1/2 cup desiccated coconut
2 cups cornflakes
Pinch of salt
Instructions
1. Preheat oven to 180°C (350°F). Line an 8×8-inch pan with baking paper.
2. Melt butter, brown sugar, and golden syrup in a saucepan until smooth.
3. Mix flour, coconut, salt, and cornflakes in a bowl.
4. Pour melted mixture over dry ingredients and combine.
5. Press into the prepared pan and bake 20–25 minutes until golden.
6. Cool completely before slicing into squares.
Notes
Swap golden syrup for honey or maple syrup.
Add chocolate drizzle for indulgence.
Freeze portions for up to 2 months.
