Description
This Coffee Date Pudding with Caramel Sauce is a rich, cozy dessert made with coffee-soaked dates and topped with buttery caramel. Perfect for holidays and family dinners.
Ingredients
1 cup (150 g) pitted dates, chopped
1 cup (240 ml) hot brewed coffee
1 teaspoon baking soda
1 1/4 cups (155 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (115 g) unsalted butter, softened
3/4 cup (150 g) brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
For the Caramel Sauce:
1 cup (200 g) brown sugar
1/2 cup (115 g) unsalted butter
1/2 cup (120 ml) heavy cream
Pinch of salt
1 teaspoon vanilla extract
Instructions
1. Soak dates in hot coffee and stir in baking soda. Let sit 10 minutes.
2. Whisk flour, baking powder, and salt.
3. Cream butter and sugar, then add eggs and vanilla.
4. Mix in date mixture, then fold in dry ingredients.
5. Bake at 350°F (175°C) for 30–35 minutes.
6. Make caramel sauce by melting butter with brown sugar, then add cream, salt, and vanilla.
7. Pour warm caramel sauce over pudding before serving.
Notes
Make extra caramel sauce if you love things extra indulgent! This dessert pairs beautifully with vanilla ice cream or whipped cream.
