Description

This Coconut Lemon Tart features a crisp buttery coconut crust filled with a silky smooth lemon coconut custard. Bright, creamy, and perfectly balanced with tropical coconut flavor, it’s an elegant dessert for spring celebrations, summer gatherings, Easter, Mother’s Day, or any special occasion.


Ingredients

For the Crust:

1½ cups all-purpose flour

½ cup unsweetened shredded coconut

¼ cup granulated sugar

½ cup unsalted butter, cold and cubed

1 large egg yolk

23 tablespoons ice water

For the Lemon Coconut Filling:

3 large eggs

¾ cup granulated sugar

½ cup fresh lemon juice

1 tablespoon lemon zest

½ cup full-fat coconut milk

¼ cup heavy cream

2 tablespoons cornstarch

2 tablespoons unsalted butter

1 teaspoon vanilla extract

Pinch of salt

For Garnish:

Whipped cream

Toasted shredded coconut

Thin lemon slices

Fresh mint leaves


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan.

2. In a food processor or mixing bowl, combine the flour, shredded coconut, sugar, and cold butter until crumbly.

3. Add the egg yolk and enough ice water to form a soft dough.

4. Press the dough evenly into the tart pan and chill for 20 minutes.

5. Prick the crust with a fork and bake for 18 to 20 minutes until lightly golden. Cool completely.

6. In a saucepan, whisk together the eggs, sugar, cornstarch, lemon juice, lemon zest, coconut milk, heavy cream, and salt.

7. Cook over medium-low heat, whisking constantly, until the filling thickens.

8. Remove from the heat and stir in the butter and vanilla extract until smooth.

9. Pour the filling into the cooled tart crust and smooth the top.

10. Refrigerate for at least 4 hours or until fully set.

11. Garnish with whipped cream, toasted coconut, lemon slices, and fresh mint before serving.

Notes

Fresh lemon juice gives the brightest flavor.

Allow the crust to cool completely before adding the filling.

Chill the tart thoroughly for clean slices.

Store covered in the refrigerator for up to 4 days.

Toasted coconut adds wonderful flavor and texture as a garnish.
