Description

A soft and creamy Coconut Bread Pudding made with simple pantry ingredients, toasted coconut, vanilla, and a rich custard. Perfect for dessert or breakfast.


Ingredients

2 large eggs

1/3 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup milk

6 slices bread, cubed

1/2 cup desiccated coconut


Instructions

1. Preheat oven to 350°F (175°C) and grease an 8-inch baking dish.

2. Whisk together the eggs, sugar, vanilla, and milk.

3. Fold the bread cubes into the custard and let soak for 5–10 minutes.

4. Transfer the mixture to the prepared baking dish.

5. Sprinkle the desiccated coconut evenly over the top.

6. Bake for 30–35 minutes until golden and set.

7. Cool slightly before serving warm.

Notes

Use day-old bread for the best texture.

Coconut milk can replace regular milk for extra flavor.

Serve warm with ice cream or whipped cream.
