Description

This Japanese-Style Cloud Milk Cake is light, airy, buttery, and incredibly soft. Made with eggs, whole milk, sifted flour, butter, sugar, baking powder, and vanilla, this delicate small-batch cake is perfect with coffee or tea.

2 large eggs

1/2 cup (120 ml) whole milk

1/2 cup (65 g) all-purpose flour, sifted

2 tablespoons sugar

2 tablespoons butter, melted

1/2 teaspoon baking powder

1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F (175°C) and line a small cake pan with parchment paper.

2. Separate the eggs, placing the egg whites in a clean mixing bowl and the yolks in another bowl.

3. Whisk the egg yolks with the whole milk, melted butter, and vanilla extract until smooth.

4. Sift the flour and baking powder together, then gradually whisk them into the milk and egg yolk mixture until just combined.

5. Beat the egg whites until foamy, gradually add the sugar, and continue beating until soft-to-medium peaks form.

6. Gently fold one-third of the whipped egg whites into the batter.

7. Fold in the remaining egg whites in two additions, using a gentle motion to preserve the air.

8. Pour the batter into the prepared pan and gently smooth the surface.

9. Bake for 25 to 30 minutes, or until the cake is set, lightly golden, and a toothpick inserted into the center comes out clean.

10. Cool the cake in the pan for several minutes, then transfer it carefully to a wire rack to cool further before slicing.

Notes

Sift the flour to help keep the batter light and smooth.

Use room-temperature eggs when possible for better whipping.

Do not overmix the batter after adding the flour.

Fold the whipped egg whites gently to preserve the airy texture.

Avoid overbaking because the cake is delicate and can dry out.

Serve with fresh berries, whipped cream, powdered sugar, honey, or a cup of coffee or tea.
