Description
This classic 7-Up cake is rich, buttery, and incredibly moist with a light lemon-lime flavor and a sweet citrus glaze. A timeless Southern dessert.
Ingredients
1 1/2 cups butter
3 cups sugar
5 eggs
3 cups flour
1/2 teaspoon salt
1 cup 7-Up
1 teaspoon lemon extract
1 teaspoon vanilla extract
For glaze:
1 cup powdered sugar
2–3 tablespoons lemon juice
1 tablespoon 7-Up
Instructions
1. Cream butter and sugar until fluffy.
2. Add eggs one at a time.
3. Mix in flour and salt.
4. Add 7-Up and extracts.
5. Pour into greased Bundt pan.
6. Bake at 160°C (325°F) for 75–85 minutes.
7. Mix glaze ingredients.
8. Drizzle glaze over cooled cake.
Notes
Use room temperature ingredients.
Do not overmix.
Grease pan well.
Let cake cool before glazing.
