Ingredients
2 fresh apples (peeled, diced small)
2 cups all-purpose flour
1 cup brown sugar
2 teaspoons ground cinnamon (divided)
½ cup butter, melted
2 large eggs
¾ cup milk
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
Pinch of salt
Optional: ½ cup chopped walnuts or pecans
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and lightly grease it.
2. In a small bowl, mix ¼ cup brown sugar with 1 teaspoon cinnamon to create the cinnamon swirl mixture. Set aside.
3. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon.
4. In another bowl, whisk eggs, melted butter, milk, vanilla extract, and remaining brown sugar until smooth.
5. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
6. Gently fold in diced apples and any optional nuts.
7. Pour half of the batter into the loaf pan, sprinkle with half of the cinnamon sugar swirl, then add the remaining batter and top with the remaining swirl. Use a knife to gently create swirls.
8. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
9. Let cool in the pan for 10 minutes, then transfer to a wire rack. Slice while slightly warm for the best flavor.
Notes
Use Honeycrisp or Granny Smith apples for the perfect balance of sweetness and tartness.
To make it dairy-free, substitute butter with coconut oil and milk with almond or oat milk.
Add chopped walnuts or pecans for a lovely crunch.
Store at room temperature for up to 3 days or refrigerate for up to 5 days. Can also be frozen for 2 months.
Best served warm with butter or a drizzle of caramel sauce.
